Odour (decreasing): Sweet, vanilla, vanillin, powdery, chocolate. Powerful.
Slightly more chocolaty vanilla note than vanillin and much more powerful. The tenacity is outstanding, and the odour power only demonstrated in dilutions of this chemical.
Uses: Ethyl Vanillin is often used to substitute a larger amount of Vanillin in a fragrance when a discolouration problem arises. The discolouration hazard can be reduced, and the sweetness maintained although there will be a loss in physical fixation effect.
